Gluten free Cookies/ Jaggery Cookies/ Oats Cookies

The healthy gluten free cookies using oats recipe is presented. Step by step cookie recipe with pictures. I love these cookies as it’s healthy, without plainflour, no wheatflour and no sugar added. Here, sugar is replaced by jaggery. Adding ground peanuts gives a great taste. You can add peanut butter brought from store. It is very healthy version of cookies compared to plain flour cookies. Banana is known for its own nutritional benefits. Here, cookies are baked without oven. Oven version is also shown.

The ingredients or items required and the preparation time is also less. The use of peanuts in the cookies enriches the nutritional benefits and also the taste. The speciality of this recipe is it is an perfect for any Indian kitchen. The oats flour is healthier option compared to that of plainflour.

The usage of jaggery instead of sugar also enriches the nutritional values. Eggless cookies recipe is shown here. Substituting the egg with banana and oil. Powder the jaggery before using. Mix it very well using grinder or mixer. It is important to mix the peanut with oil very well to get the fluffiness in the cookies.

This cookie is as crispy outside and chewy inside and as tasty as maida or plain flour cookies. Here, there will be no usage of brown sugar. The cookies appear to be golden due to the usage of jaggery and oat flour. This can be stored in air tight container for kids snacks box. Tricks for good taste:

  1. Roast Peanuts on low flame
  2. Do not over bake the cookies.
  3. Grind the peanuts on high speed, scrape it after a pulse. Repeat it for 3 pulses.
  4. Grind the peanuts when it is warm. It releases oil after 3 pulses.
  5. Vanilla flavour can be replaced in place of cardamom here.

Cooking Total Time: 45 Minutes for non-oven, 25 Minutes for oven (including preheating).

Ingredients Required

  1. Oats –1 cup
  2. Groundnuts –0.5 Cup
  3. Oil –1/4th cup (4 Spoons)
  4. Jaggery (Cane sugar) – Half Cup or 8 spoons (can be replaced with white sugar)
  5. Cardamom –3 pods
  6. Banana –1
  7. Baking Soda—0.5tsp
  8. Dates –8 chopped

Method:

Step 1: Add 3 pods Cardamom/ Elaichi into Mixer.

Step 2: Add 1 Cup Oats.

Step 3: Grind it to Coarse Powder.

Step 4: Roast 0.5 Cup Peanuts on Low flame (takes ~10 Minutes).

Step 5: Add it to mixer when it’s warm and grind it for 3 pulses on high speed(till it releases oil).

Step 6: Add 1/4th Cup or 4 tbsp Oil (any flavourless, like Coconut oil or sunflower or vegetable oil).

Step 7: Add 0.5 Cup Jaggery (powdered) or 8 tbsp.

Step 8: Add 1 Banana coarsely chopped.

Step 9: Grind it to fine paste.

Step 10: Transfer it to a bowl and add 0.5tsp Baking Soda.

Step 11: Add ground Oats Mixture and 8 dates chopped, mix it well.

Step 12: How to Bake without Oven. Preheat a pan with 1 cup Salt for 10 minutes.

Step 13: Bake for 30 Minutes on low flame (cover it tightly).

** How to bake using Oven: Preheat 10 minutes for 180 deg. Celsius and bake it for 20 Minutes.
