Semolina pancake/ Rava roti/ Easy quick instant breakfast recipe in 10 minutes

Easy instant quick and delicious breakfast recipe in 10 minutes. Yes, 10 minutes. Try it and please let me know how it turned 🙂 This is an Indian style quick and easy veg breakfast recipe. It is called as Semolina pancake or ರವಾ ರೊಟ್ಟಿ in Kannada or ಸಜ್ಜಿಗೆ ರೊಟ್ಟಿ (sajjige rotti) in Konkani or Amchigele. Always it’s a headache what to prepare for the breakfast every morning. And the pain will be more for choosy kid’s Mom (appreciate to your patience Moms; including my Mom as I was very choosy during my childhood days).

Here is a quick and delicious breakfast recipe. Anyone can prepare in 10 minutes. I have added 1 grated carrot which enriches the morning breakfast nutrition, You can add (or hide veggies ;)) beetroot/ cucumber which are finely grated. Add little water while adding cucumber as it releases water.

How to make rotis soft?

Addition of banana and coconut in this recipe makes the roftis very soft. Add as much water as per the thickness of the pancakes/ rotis. Make it runny consistency for thin rotis. Always cover and cook the rotis.

This recipe is authentic Konkani breakfast or snacks recipe served in Magalore side or coastal side of Karmataka. The blend of coconut, banana, cumin seeds and green chillies always provides good taste. Tricks for good taste:

  1. Use fresh coconut for more flavour. However, the dry desiccated coconut gives the same if soaked for 10 minutes.
  2. Chop onion finely.
  3. Do not overcook the rotis.
  4. Add curry leaves for greater aroma (however, it’s optional).

1. Rava/ Semolina1.5 cups
2. Coconut0.5 cup
3. Banana 1 (large)
4. Jaggery2-3tbsp
5. Green chillies2 (medium spice)
6. Cumin seeds/ jeera1tbsp
7. Salt0.5tbsp *as per taste)
8. Water 0.5cup
Ingredients required

Method:

Step 1: Grind 2 green chillies, 3tbsp Jaggery, 1 banana, half cup coconut using 0.5 cup water to thick paste.

Step 2: Add 1.5 cup rava/ semolina to a bowl, ground paste, 1 onion, 1tbsp jeera.

Step 3: Add water (almost half cup) batchwise and mix it to thick paste.

Step 4: Add few coriander leaves (optional) and 1 grated carrot.

Step 5: Spread it using hand or spoon on tawa/ pan, cook it on medium fame on both sides (cook both sides).

Step 6 : Soft, fluffy semolina pancake is ready to serve hot.
