OKRA CURRY/ Benda Sagle/ / Bhindi curry

The delicious version of Ladies Finger curry or Okra curry without using lentils (dal) or garam masala. Okra is called Bhindi/ Bendi in Hindi, Byand in Konkani. Okra is a very healthy vegetable. It is known for its own nutritional benefits. This curry is Konkani style recipe/ Amchigele style/ Coastal curry recipe of India. Benda sagle or bhindi curry or Okra curry without using dal/ lentils and no garam masala is shown here. The ingredients or items required and the preparation time is also less. The use of coconut in the curry enriches the nutritional benefits and also the taste. The speciality of this recipe is it is an Indian vegetable sambar/ sambhar recipe prepared without dal/ lentils. South Indian recipe best suited for roti/ chapathi/ rice.





 Tricks for good taste:

  1. Use fresh coconut for more flavour. However, the dry desiccated coconut gives the same if soaked for 10 minutes.
  2. Chop ladies finger/ Okra/ bhindi/ byand according to the required size.
  3. Do not overcook the vegetable
  4. Add Kashmiri chilli for good colour in curry (optional)
  5. Number of chillies used here depends on the spice level.

Ingredients Required:
1. Ladies finger/ Okra/ Bendi/ Bendekai --10 to 15 
2. Coconut desiccated --1/2 cup 
3. Red chilli --8 
4. Coriander seeds/ Dhaniya--2 tbsp 
5. Urad dal/ Split black gram--1 tbsp 
6. Fenugreek/ Methi seeds --1/4th tbsp 
7. Coconut oil/ any oil --1 tbsp 
8. Salt --3 spoons 
Seasoning:
1. Coconut / any oil --2 tbsp 2. Mustard seed --1 tbsp 3. Curry leaves --few

Procedure:

Step 1: Wash, Pat dry (no water on okra), Chop Ladies finer/ okra horizontally

 Step 2: Roast Spices (Coriander seeds, Cumin seeds, Red Chillies, Fenugreek seeds, Urad dal or split black gram).

Step 3: Grind Masala (Coconut, Red chillies, Tamarind, Roasted Coriander seeds) into fine paste then add roasted Urad dal or split black gram and Fenugreek seeds (methi) and grind to fine paste (this gives flavor to curry).

Step 4: Heat oil, Mustard and curry leaves, Roast the Ladies finger/ Okra till raw smell goes(3 minutes).

Step 5: Now add ground paste to roasted Okra (boil 10 minutes).

Step 6: Check if Okra is cooked then add 1TBSP Salt.

Step 7: Boil it 2 more minutes, check for salt and spice level and serve hot.
